Tomatensauce

Ingredients:

  • 1.5 kg ripe tomatoes
  • 1 onion
  • 3 garlic cloves
  • olive oil
  • 1 tbsp balsamic vinegar
  • handful fresh basil leaves
  • salt and pepper to taste

Instructions:

  1. Peel the tomatoes, roughly chop them and keep the juice aside.
  2. Finely chop the onion and garlic cloves. Heat a saucepan with some oil and add the onion and garlic. Fry it until the onion becomes translucent.
  3. Add the chopped tomatoes and juice to the onion and garlic mixture. Turn up the heat and bring the mixture to a boil.
  4. Add the balsamic vinegar and reduce the heat to low. Let it simmer gently for about 20 to 25 minutes, stirring occasionally.
  5. Using an immerser, blend the sauce until it’s smooth.
  6. Rip the basil leaves and add them to the sauce. Add salt and pepper to taste.
  7. Let the sauce cool down before use. You can store it in the fridge for up to 3 days or freeze it in a freezer-safe container for up to 3 months.
